Meatless Monday: Quinoa Tacos


My husband LOVES tacos. He has told me for years that I could make tacos for dinner every night and he would love it! So, when I attempted to remove the meat from tacos, he was skeptical. However, using this delicious and hearty Quinoa grain instead of meat will not only boost your health but also save you money. We buy the huge bag at Costco or the small boxes from Trader Joes…it’s all around better for you! Give it a try 🙂


Ingredients:
  • quinoa
  • packet of taco seasoning
  • your favorite taco fixings (black beans, avocado, cheese, sour cream, lettuce, tomato, salsa, etc.)
  • your favorite kind of tortillas

Directions:
Cook the quinoa according to the package. If you usually make 1 pound of ground beef, use 1 cup dry quinoa (cooked in 2 cups water). After it is cooked, add the 1 packet of taco seasoning and about 1/3 cup water. Stir and add a little more water, if needed. Try to serve immediately because it does tend to get dry as it sits. Fix up your tacos in your tortillas, and enjoy this yummy meat alternative.  Plus served with corn tortillas, this is a gluten-free meal!


Nutrition fact: Quinoa is a unique grain because it’s a complete protein by itself!
